La Bandera for Toddlers: A Mild Rice and Beans Nursery Recipe

La Bandera — "the flag" — is the national dish of the Dominican Republic: rice, beans and meat served together on one plate. Chef Param's Caribbean-inspired nursery version keeps the flavours mild and the textures soft, so it's a colourful, filling meal that toddlers can enjoy and parents can batch-cook at home.

Ingredients

  • Chicken or beef mince
  • Long-grain rice
  • Red kidney beans
  • Onion
  • Red pepper
  • Carrot
  • Garlic
  • Tomato
  • Olive oil
  • Fresh coriander
  • Mild paprika
  • Oregano
  • Black pepper
  • Lime juice
  • Low-salt stock

Method

  1. Sauté the onion, garlic, carrot and red pepper in a little olive oil until soft.
  2. Add the mince, paprika and oregano, and cook thoroughly.
  3. Add the tomato, kidney beans and low-salt stock. Simmer until tender and well combined.
  4. Cook the rice separately until soft and fluffy.
  5. Serve the mild mince and bean mixture with the rice, finished with a little coriander and a squeeze of lime.

Why it's a good meal for toddlers

Pairing beans with rice is a classic combination for good reason. Mince and kidney beans give protein and iron, beans and vegetables add fibre, and rice provides steady energy for growing children. Mild paprika and oregano bring flavour without heat, which helps toddlers get used to new tastes. Low-salt stock keeps the dish suitable for young children.

Allergens and swaps

Allergens: wheat and cereals containing gluten. Check the label of your stock, as some contain gluten or celery. Always cross-check against your child's individual dietary and allergy plan.

  • Vegetarian: replace the mince with chickpeas and spinach, or a soya-based alternative.
  • Vegan: use the vegetarian swap with vegetable stock, and choose dairy-free alternatives for any toppings.

Tips for younger toddlers

  • Lightly mash or halve kidney beans for children under two.
  • Mix some of the rice into the sauce so it's easier to scoop with a spoon.
  • Serve the rice and bean mixture side by side, like the flag, so children can see and name each part.
